OUR SMOKING LABORATORY

TECHNOLOGY AT THE SERVICE OF QUALITY

Our smoking cells, made in France, meet the most demanding European technological and health standards. For optimal quality of our smoked tuna, each smoking cycle is assisted by specific computer software, allowing the rigorous control of each of the parameters implemented during the 15 hours of the smoking protocol.

At the end of this cycle, all these parameters are taken over by a computer displaying a curve of the different data, thus allowing the production controller to check the conformity of the product.

A HIGH PRODUCTION CAPACITY

Our 4 cells, each equipped with a smoke generator, allow cold smoking of a daily production of 8oo kg of whole fillets of ALBACORE TUNA.
